1 teaspoon ENO fruit salt

2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon sesame seeds
8–10 curry leaves
2 green chilies, slit
½ cup water
1 tablespoon sugar
1 tablespoon lemon juice
- For Garnish
2 tablespoons chopped coriander leaves
2 tablespoons grated fresh coconut
Directions
- Grease a steaming tray or cake pan with oil and keep it ready.
- In a large bowl, combine gram flour, semolina, sugar, turmeric, salt, ginger-green chili paste, lemon juice, and water. Mix until you get a smooth, lump-free batter.
- Prepare your steamer and bring the water to a gentle boil.
- Add ENO fruit salt to the batter and gently mix. The batter will become light and frothy.
- Immediately pour the batter into the greased pan.
- Steam for 18–20 minutes over medium heat or until a toothpick inserted comes out clean.
- Allow the dhokla to cool slightly before cutting it into squares.
- Heat oil in a small pan. Add mustard seeds and let them crackle. Add sesame seeds, curry leaves, and green chilies.
- Mix water, sugar, and lemon juice, then pour into the tempering. Simmer for 1 minute.
- Pour the tempering evenly over the dhokla. Garnish with coriander leaves and grated coconut. Serve warm with green chutney.
