Ingredients

Traditional Mixed Vegetables (Chopped into large cubes)
  • 1 ½ cups yellow pumpkin (kumro) cubed
  • 1 cup sweet potato (ranga aloo) peeled and cubed
  • 1 medium raw green banana (kanch kola) peeled and diced
  • 1 cup eggplant (begun) diced into bite-sized chunks
  • 1 cup pointed gourd (potol) striped and sliced
  • ½ cup white radish (moolo) diced small
  • 1 medium potato (aloo) cubed
Tempering (Phoron) & Spices
  • 3 tablespoons mustard oil traditional base
  • 1 ½ teaspoons panch phoron Bengali 5-spice: cumin, brown mustard, fenugreek, nigella, fennel
  • 2 bay leaves (tejpatta)
  • 2 dry red chilies broken in half
  • 1 ½ tablespoons ginger paste freshly grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder (jeera)
  • 1 teaspoon coriander powder (dhania)
  • 4 green chilies slit lengthwise
  • 1 tablespoon sugar vital for traditional sweet-savory balance
  • 1 teaspoon salt to taste
  • 1 tablespoon pure ghee for finishing sacred aroma
  • 1 teaspoon bhaja masala roasted cumin and dry red chili powder

Method

Vegetable Prep & Tempering
  1. Chop vegetables uniformly: Ensure all vegetables (pumpkin, sweet potato, raw banana, brinjal, potol, radish) are cut into equal, chunky pieces so they cook evenly.
  2. Heat mustard oil & crackle phoron: In a heavy kadai, heat 3 tbsp mustard oil until smoking. Lower heat and add bay leaves, dried red chilies, and 1.5 tsp panch phoron. Let the seeds sputter for 30 seconds until aromatic.
Layered Cooking Technique
  1. Sauté firm root vegetables first: Add the hard vegetables first (potato, sweet potato, radish, raw banana, and potol). Sauté on medium heat for 5-6 minutes until lightly golden.
  2. Add ginger & spices: Add the grated ginger paste, slit green chilies, turmeric, cumin powder, and coriander powder mixed with 2 tbsp water (to prevent burning). Stir well for 2 minutes.
  3. Add soft vegetables: Add the pumpkin and eggplant chunks along with salt and sugar. Stir gently to coat in the spices.
  4. Cover and slow-cook (No extra water needed!): Cover the kadai with a tight lid and reduce heat to low. The vegetables (especially pumpkin and eggplant) will release their natural juices. Cook covered for 20-25 minutes, stirring occasionally, until all vegetables are melt-in-the-mouth soft and tender.
  5. Finish with Ghee & Bhaja Masala: Uncover the pan. If there is excess water, simmer on medium heat until the curry is semi-dry and glossy. Sprinkle pure ghee and freshly roasted Bengali Bhaja Masala. Gently fold and turn off heat.
