How Many Whistles to Boil Rajma
- Soak rajma: Rinse 1 cup of rajma and soak in 4 cups of water for at least 8 hours or overnight. Drain soaking water.
- Pressure cook with whistles: Transfer soaked rajma to pressure cooker with 4 cups fresh water, 1 tsp salt, bay leaf, black cardamom, and cinnamon. Close lid with whistle on. Cook for 1 WHISTLE ON HIGH HEAT, then immediately lower heat to low and cook for 15 MINUTES (or cook for 5 to 6 whistles on medium flame).
- Check doneness: Allow natural pressure release for 10-12 minutes. Open lid and press a kidney bean between your thumb and index finger—it must smash effortlessly like soft butter without any firm core.
Make the Dhaba-Style Punjabi Gravy
- Sauté aromatics: In a separate heavy kadai or pan, heat 2 tbsp ghee or mustard oil. Add cumin seeds and let them sizzle. Add finely minced onions and sauté on medium heat for 8 to 10 minutes until deeply golden brown.
- Add ginger-garlic & spices: Stir in ginger-garlic paste and sauté for 1 minute until fragrant. Add turmeric, Kashmiri red chili powder, coriander powder, and cumin powder. Sauté for 30 seconds.
- Cook tomato masala: Add pureed tomatoes and ½ tsp salt. Cook on medium heat for 6 to 8 minutes until oil separates from the masala base (bhuna stage).
Simmer & Thicken the Curry
- Combine with boiled rajma: Pour the boiled rajma along with its flavorful cooking water into the masala. Stir well.
- The secret mashing step: Take a ladleful of boiled kidney beans against the side of the pan and mash them with the back of your spoon. This releases natural bean starch, creating a thick, velvety restaurant-style gravy without any cornstarch.
- Simmer and finish: Cover and simmer on low heat for 12 to 15 minutes until the curry turns thick and glossy. Finish with garam masala, crushed kasuri methi, and fresh coriander. Serve piping hot with steamed basmati rice (Rajma Chawal).
