Ingredients

Rabdi Milk Base
  • 1 liter full-cream whole milk buffalo or full-fat dairy milk
  • 3 tablespoons sugar adjust to taste (custard apple is naturally very sweet)
  • ½ teaspoon green cardamom powder (elaichi) freshly ground
  • 1 pinch saffron strands (kesar) soaked in 2 tbsp warm milk
Custard Apple & Garnish
  • 1 cup fresh custard apple pulp (sitaphal) deseeded, chilled
  • 1 tablespoon slivered pistachios for garnish
  • 1 tablespoon slivered almonds (badam) for garnish
  • 1 teaspoon rose water optional, for royal aroma

Method

Simmering & Reducing Milk
  1. Boil full-cream milk: In a wide, heavy-bottomed pan or kadai, bring 1 liter of whole milk to a rolling boil over medium heat.
  2. Form malai layers: Lower heat to low. As a layer of cream (malai) forms on the surface, gently push it to the sides of the pan with a wooden spatula. Repeat this process every few minutes.
  3. Reduce by half: Continue simmering and collecting cream on the edges until the milk has reduced to less than half its original volume (about 30-35 minutes) and turned thick and pale cream in color.
  4. Add sugar & aromatics: Scrape all the collected cream layers from the sides back into the reduced milk. Stir in sugar, cardamom powder, and saffron milk. Simmer for 2 more minutes until sugar is fully dissolved.
Adding Sitaphal & Chilling
  1. Cool completely (CRITICAL): Turn off heat and allow the rabdi to cool down completely to room temperature. NEVER add custard apple pulp to hot milk, or the fruit acid can cause the milk to curdle!
  2. Fold in custard apple pulp: Once the rabdi is completely cool, gently fold in the fresh deseeded custard apple pulp. Stir until evenly distributed.
  3. Chill & serve: Transfer to earthen clay matkas or bowls. Chill in the refrigerator for at least 2 hours. Garnish with slivered pistachios, almonds, and extra saffron before serving cold.

Notes

The Golden Rule of Sitaphal Rabdi: Always let the reduced milk cool completely before folding in the custard apple pulp. Adding pulp to warm or hot milk breaks the texture and can curdle.
Deseeding Hack: Pulse custard apple pulp in a blender on the lowest pulse speed for 2-3 seconds to dislodge the seeds easily, then separate seeds with a fork.
