Ingredients

Idli Base
  • 6-8 cold leftover idlis refrigerated idlis hold shape best
  • 2 tablespoons cooking oil or ghee for pan-frying crispiness
Masala Tempering (Tadka)
  • 1 teaspoon mustard seeds (rai) black mustard seeds
  • 1 teaspoon cumin seeds (jeera)
  • 1 sprig fresh curry leaves (kadi patta) about 10-12 leaves
  • 2 green chilies finely chopped
  • 1 medium onion finely chopped
  • ¼ teaspoon turmeric powder (haldi)
  • 1 ½ tablespoons idli podi (gunpowder) or pav bhaji masala for spicy punch
  • ½ teaspoon chaat masala for tangy street-food kick
  • ½ teaspoon salt to taste (idlis already have salt)
  • 1 tablespoon fresh lemon juice squeezed on top
  • 2 tablespoons fresh coriander leaves finely chopped

Method

Cutting & Frying Idlis
  1. Cut idlis into cubes: Take refrigerated cold idlis and slice each idli into 4 to 6 equal bite-sized cubes. Cold idlis are firm and will not crumble when tossed.
  2. Pan-fry for crispiness: Heat 1.5 tbsp oil or ghee in a wide non-stick pan or cast-iron skillet. Add the idli cubes and pan-fry on medium-high heat for 4-5 minutes, tossing occasionally, until all sides turn golden and crispy. Remove cubes and set aside.
Tempering & Toss
  1. Sputter the spices: In the same pan, add the remaining oil. Add mustard seeds, cumin seeds, crackling curry leaves, and chopped green chilies. Sauté for 30 seconds until fragrant.
  2. Sauté onions: Add chopped onions and sauté for 2-3 minutes until soft and translucent.
  3. Add spice powders: Lower heat and stir in turmeric powder, idli podi (or red chili powder / pav bhaji masala), and chaat masala. Sauté for 20 seconds.
  4. Toss crispy idlis: Add the pan-fried crispy idlis back into the pan. Toss vigorously for 1-2 minutes until every idli cube is thoroughly coated in the fragrant spicy masala.
  5. Garnish & serve: Turn off heat. Squeeze fresh lemon juice over the top and garnish with chopped coriander leaves. Serve immediately while piping hot and crunchy with fresh coconut chutney or masala chai.

Notes

Best Leftover Recipe: Freshly steamed hot idlis are too soft and moist to fry. Always use idlis that have been refrigerated for at least 3-4 hours or overnight so they crisp up without breaking.
Air Fryer Method: Toss idli cubes with 1 tsp oil and air fry at 390°F (200°C) for 8-10 minutes until crunchy, then toss in the prepared masala pan!
