Method
- Preheat the oven. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
- Combine the dry ingredients. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Mix the wet ingredients. In a large bowl, whisk the eggs, vegetable oil, granulated sugar, brown sugar, and vanilla until smooth.
- Add the zucchini. Stir the grated zucchini into the wet mixture until evenly incorporated.
- Combine wet and dry ingredients. Gradually add the dry ingredients to the zucchini mixture. Stir just until combined. Do not overmix. Fold in the chopped nuts if using.
- Bake. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool. Let the zucchini bread cool in the pan for about 10–15 minutes. Remove it from the pan and transfer it to a wire rack to cool completely before slicing.
