Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 large eggs
  • ½ cup vegetable oil
  • ¾ cup granulated sugar
  • ¼ cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini lightly squeezed
  • ½ cup chopped walnuts or pecans optional

Method
 

  1. Preheat the oven. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  2. Combine the dry ingredients. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Mix the wet ingredients. In a large bowl, whisk the eggs, vegetable oil, granulated sugar, brown sugar, and vanilla until smooth.
  4. Add the zucchini. Stir the grated zucchini into the wet mixture until evenly incorporated.
  5. Combine wet and dry ingredients. Gradually add the dry ingredients to the zucchini mixture. Stir just until combined. Do not overmix. Fold in the chopped nuts if using.
  6. Bake. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Cool. Let the zucchini bread cool in the pan for about 10–15 minutes. Remove it from the pan and transfer it to a wire rack to cool completely before slicing.

Notes

Do I need to peel the zucchini?
No. The zucchini skin is tender and adds color and nutrients, so there’s no need to peel it.
Should I squeeze the zucchini?
Lightly squeeze excess moisture from the grated zucchini. You don't want it completely dry because some moisture helps make the bread tender and moist.
Can I add chocolate chips?
Yes! Replace the nuts with ½ cup chocolate chips, or use both for a chocolate chip zucchini bread.

Store cooled zucchini bread in an airtight container at room temperature for up to 3 days or refrigerate it for up to 1 week.
