Ingredients

Ingredients
  • 1 cup aged long-grain white basmati rice such as Royal, Daawat, or Tilda
  • 1.5 cups water filtered cold water
  • 1 teaspoon ghee, butter, or olive oil coats grains to prevent clumping
  • ½ teaspoon fine sea salt optional, enhances natural nutty aroma
  • 1 small green cardamom pod or bay leaf optional for fragrant restaurant aroma

Method

Rinsing, Soaking & Stovetop Cooking
  1. Rinse until water runs clear: Place 1 cup basmati rice in a fine-mesh strainer. Rinse under cold tap water for 1 to 2 minutes, gently swirling with your fingers, until the milky surface starch washes away and water runs transparent.
  2. Soak for 20 minutes (Mandatory): Transfer rinsed rice to a bowl, cover with fresh water, and let soak for 20 minutes. Soaking hydrates the long grain from within, allowing it to expand up to twice its length without breaking.
  3. Bring water and rice to a boil: Drain soaked rice thoroughly. In a medium heavy-bottomed saucepan with a tight-fitting lid, combine drained rice, 1.5 cups fresh water, 1 tsp ghee/butter, salt, and aromatics. Bring to a rapid rolling boil over medium-high heat.
  4. Low-heat covered simmer: As soon as boiling begins, immediately cover tightly with the lid and reduce burner heat to the lowest possible setting. Simmer undisturbed for exactly 12 minutes (do not remove lid or stir).
  5. The 10-minute resting steam: Turn off heat completely. Keep saucepan on the warm burner with the lid tightly sealed for 10 full minutes. The trapped steam finishes cooking the delicate starches. Remove lid and gently fluff grains with a fork.
