Ingredients

Core Ingredients
  • 1 cup dry brown or green lentils picked over for pebbles and rinsed
  • 3 cups water or vegetable broth 1:3 ratio for gentle simmering
  • 2 cloves garlic peeled and smashed
  • 1 whole dried bay leaf infuses rich earthy aroma
  • ½ teaspoon fine sea salt added toward the end of cooking
  • 1 tablespoon extra virgin olive oil drizzled at the end

Method

Stovetop Simmering Technique
  1. Sort and rinse: Spread 1 cup dry lentils on a plate or cutting board to quickly pick out any stray pebbles or broken kernels. Rinse in a fine-mesh strainer under cold water.
  2. Combine with liquid & aromatics: Place lentils, 3 cups water (or broth), smashed garlic cloves, and bay leaf into a medium saucepan. Bring to a rapid boil over medium-high heat.
  3. Simmer gently: As soon as boiling begins, reduce heat to low so liquid maintains a gentle, lazy simmer. Cover loosely with a tilted lid. Cook: 20 to 25 minutes for brown lentils; 25 to 30 minutes for green/Puy lentils; or 15 minutes for quick red lentils.
  4. Season with salt: Stir in ½ teaspoon sea salt during the last 5 minutes of cooking. (Adding salt at the beginning can make the outer skins tough).
  5. Drain excess liquid & finish: Test a lentil with your teeth—it should be tender with a pleasant bite, not crunchy or mushy. Drain any excess water in a colander, discard the bay leaf, drizzle with olive oil, and serve.
